We weren't going to let the protocol take his favorite food from him.

When Kenzo was diagnosed with Cerebral Folate Deficiency and we started the GFCFSF protocol under his care team at CreateHealth Manila, the first real question wasn't about supplements. It was about sinigang. About adobo. About champorado on a rainy afternoon.

Most of these dishes just needed a swap or two โ€” coconut aminos for toyo, cane vinegar already in the pantry, coconut milk instead of evaporated milk. This collection is what we built over months of cooking, testing, and failing deliciously.
